Vineyards
Wine made from the terroir of the Valley of the Wind Akiu Onsen area
Akiu Winery is located in Akiu Onsenkyo, known as the inner sanctum of Sendai, about 30 minutes by car from the center of Sendai. The winery and vineyards are located on the southern slope of a valley between mountains on the north and south, with the Natori River flowing in the nearby valley. The cool breeze flowing through the valley and river of Akiu blows through the furrows of the fields even during the summer. This cool breeze is a blessing from heaven, blowing away the humidity during the heatwaves, cooling the fruit, and allowing the grapes to ripen fully while retaining their acidity. The winery's vineyard is home to about 7,000 grape vines of 12 varieties, including Merlot and Pinotage for red wine, and Pinot Gris, Gewürztraminer, Chardonnay, and Albariño for white wine. Behind the vineyard is a mountain where tuff commonly known as "Akiu Stone" is mined. The soil containing this Akiu Stone produces wines with a mineral feel.
Winemaking
Brewing equipment is cleaned at high temperatures using steam boilers, and ozone water is used to ensure thorough hygiene control throughout the entire brewing process. In addition, a dedicated computer-controlled chiller is used to optimally manage temperatures at each stage of production.
Fermentation tanks are mainly stainless steel tanks, and we use tanks of 4,000 liters, 3,000 liters, 2,000 liters, 1,000 liters, and 500 liters depending on the production volume and type of wine.
For bottling, we have installed filling equipment suitable for still wine and sparkling wine, as well as a corking machine suitable for corks and screw caps.
