The following is from Chef Matsuda's announcement.
In Tome City, Miyagi Prefecture, Mr. Tomie will raise a whole cow, a mature Japanese Black cow, and Mr. Shinbo of "Sakaeya" in Shiga Prefecture will take care of it. This is the "Whole Cow" event for 2025 🐃
The farm owner tells the story of the cows from birth to shipment.
The artisan's skill in preparing and aging the meat for us to eat, further elevating it to the level of a high-quality ingredient.
Finally, we chefs prepare the food and eat it.
Let's take this opportunity to reflect on the life we take, truly appreciate it, and of course, enjoy a delicious and fun meal! 😁
